Shrimp with Kale & Spaghetti
When days are long, and an elaborate meal isn’t in the cards, I always turn to shrimp. Not only do I love the taste of shrimp (especially shrimp in a good citrus marinade), but it also cooks in less than five minutes. So if you’re looking for an under 30 minute weeknight recipe, look no further than this Shrimp with Spaghetti and Kale recipe.

Ingredients:
1 bunch of kale (de-stemmed)
1 clove of garlic (minced)
1 lemon
2 handfuls of walnuts
1/2 pound of Shrimp
1/2 a box of spaghetti
Cayenne Pepper
Olive Oil
Directions:
On a frying pan, heat up a drizzle of olive oil and the minced garlic. Once sizzling, add in the de-stemmed kale pieces. Similar to spinach, kale shrinks when it is cooked, so remember to add more than you think you need! Squeeze half a lemon over the kale and mix around. The kale does not need a lot of time to cook - 3 minutes should be plenty! Set aside in a bowl.
Bring a pot of water to a boil. Add in half a package of spaghetti. Boil spaghetti for 6 minutes. Feel free to taste a noodle to make sure it is cooked to your liking. Drain and set aside.
Using the same frying pan as before, lay out your shrimp and coat with a drizzle of olive oil and cayenne pepper (use your judgement based on your own spice tolerance). Squeeze the other half of your lemon over the shrimp. Cook until opaque and orange (about 5 minutes).
Chop or crush two handfuls of walnuts.
In a big bowl, combine the spaghetti, shrimp, kale, and walnuts. Drizzle olive oil, mix, and enjoy!
